• Cook Time: 
  • A wholesome jowar cake made with banana, and slathered with decadent salted caramel sauce for a sinful treat. You could also use chocolate sauce and throw in some nuts if you like.

Ingredients

  • 1 ripe banana
  • 1/2 cup butter/ oil
  • 1/2 cup brown sugar
  • 3/4 cup jowar flour
  • 2 Tbsp wheat flour
  • 1/2 tsp cinnamon powder
  • 1 tsp baking powder
  • A pinch of salt
  • 2 large eggs
  • 1/4 cup milk
  • For the Salted Caramel Sauce
  • 3/4 cup sugar
  • 200 ml double cream
  • 2 Tbsp butter
  • 1/2 tsp salt (Kosher/ sea salt)

Method

  1. Pre-heat the oven at 100 degree C. Grease a 6-inch baking tray with a little oil and line with a butter paper. Keep aside.
  2. Melt butter in a double boiler and let it cool.
  3. Peel and mash the banana in a mixing bowl. Add melted butter to it and whisk well.
  4. Add the sugar, little at a time, and continue whisking.
  5. In a separate mixing bowl, whisk the eggs until light and fluffy. Add to the banana mixture and mix well.
  6. Sift together the jowar flour, wheat flour, cinnamon powder, baking powder and salt in a bowl. Add it, one teaspoon at a time, to the banana and egg mixture. Fold carefully to acquire an even mixture without any lumps.
  7. Add the milk to make a smooth batter. It should not be too thick or too runny.
  8. Bake in the oven at 150 degree C for 20-25 minutes or until a skewer inserted at the centre comes out clean. Remove from the oven and let it cool
  9. For the Salted Caramel Sauce
  10. In a mixing bowl, whip the cream and butter until light and keep it aside.
  11. Place the sugar in a large pan over low heat and allow it to melt. You can shake the pan slightly from time to time to evenly melt the sugar. After 4-5 minutes, the sugar will start acquiring a brown colour. Keep a strict watch because it happens rather rapidly.
  12. Once it turns an amber brown colour, remove from the flame and carefully add in the cream and butter mixture. Stir well so that the ingredients combine together and return to the flame.
  13. Stirring continuously, let the mixture thicken to a sauce-like consistency. Add in the salt and stir again to mix well. Remove from the flame and let it cool.
  14. To Serve
  15. Slice the banana cake and serve warm topped with salted caramel sauce.
